Hooked By A Thread
OK, the bottling thread got me thinking about eating better, then benefits of beans entered my mind. Why do I love beans out of the can but not when I make them? Thought was again a 'texture' thing. So decided to make a pot of baked beans and pressure can them to see.
But no navy beans...... thought onwards that the same kinda, but to a lesser extent, carried over to chili con carne. Did have pinto beans.
So batch made and pressure cooker is heating up
Pressure Can Chili Con Carne
Ingredients
Yield: 9 pints
• 3 C dried pinto beans
• 5-1/2 C water
• 5 teaspoons salt (separated)
• 1 tsp sugar
• 3 lbs ground beef
• 2-1/2 C chopped onion
• 1 C finely chopped celery hearts and stems
• 1 head garlic finely chopped
• 2 tsp black pepper (fresh ground coarser)
• 3 tbsp mild chili powder
• 1 tsp hot chili powder (or hot pepper flakes)
• 2 tbsp cumin seed
• 2 tsp oregano
• 2 pints tomato juice (home made)
• 2 pints tomato sauce (home made)
• 2 tablespoons lemon juice (from a lemon)
Combine the beans with 5-1/2 cups of fresh water. Soak 12-18 hrs, rinse and drain. Cover beans w/2 inches of fresh water and bring to a boil. Reduce the heat and simmer hard for 30 minutes. Drain
Brown beef in some high temp animal fat that doesn’t congeal at room temp. (duck, goose) and add spices/remaining salt while browning. Put in large pot. De-glaze fry pan w/1 jar tomato juice and also add to pot. Finely chop onions and barely brown in more fat (duck, goose) Add chopped garlic last min or two. Add frying pan onions/garlic into large pot.
Add remaining ingredients and gently simmer for 30 mins.
Pack in pints
Vent 10 mins. Process 75 mins.

well .....
canned all except enuf for me and the wifey for supper. Always re-use lids so usually there is at least one that doesn't seal and sure enuf was. So could try side by each one that simmered in pan for same time and one processed.
Did indeed like the processed one better. Beans were what I call 'cooked' in comparison.
Really looking forward to trying same w/baked beans. Is one of my too lazy/hungry open a can and eat out of it meals. But w/the BPA and the replacement that isn't better but may be worse be nice to have home made version.
And use up some of the ham bones been saving in freezer.
All in all big recommend
