Canned Chili con Carne
Few things I like having around that I can eat out of a can for a quick meal even on the go or away
Like canned chili and thought would try to make my own.
Was well worth the effort
Edit to Add: can substitute finely chopped green and/or red and/or orange and/or yellow peppers but cut down correspondingly on the onions. Personally I find green peppers to be overwhelming. But others might not. The red, orange, yellow ones might be a good idea tho
Pressure Can Chili Con Carne
Ingredients
Yield: 9 pints
• 3 cups dried pinto beans (or red kidney)
• 5-1/2 cups water
• 5 teaspoons salt (separated)
• 1 tsp sugar
• 3 lbs ground beef, chicken or turkey
• 2-1/2 cups chopped onion
• 1 cup finely chopped celery hearts and stems
• 1 head garlic finely chopped
• 2 teaspoon black pepper
• 3 tablespoons mild chili powder
• 1 tsp hot chili powder
• 2 tablespoons cumin seed
• 2 teaspoons oregano
• 2 pints tomato juice (home made)
• 2 pints tomato sauce (home made)
• 2 tablespoons lemon or lime juice
Combine the beans with 5-1/2 cups of fresh water. Bring to a boil. Reduce the heat and simmer for 30 minutes. Drain
Brown beef in some fat that doesn’t congeal at room temp. (duck, goose) and add spices while browning. Put in large pot. Deglaze fry pan w/1 jar tomato juice and also add to pot. Finely chop onions and saute till brown edges in more fat (duck, goose) Add chopped garlic last min or two. Add frying pan onions/garlic into large pot w/the cooked beans.
Add remaining ingredients and gently simmer for 30 mins.
Pack in pints
Vent 10 mins. Process 75 mins. @ 11-12lbs dial guage
