Kefir Einkorn Crackers
Kefer Einkorn Crackers
• 2 c. kefir
• 1/2 c. olive oil
• 2 tsp. sugar
• 1 qt. Einkorn Whole wheat berries, grind finest
• 2 tsp. sea salt
• 2 tsp Garlic Powder
• 1/2 tsp. baking soda
• sesame or poppy seeds
• salt for topping (optional)
1. Mix the kefir, soft butter, and honey in a large bowl.
2. In a small bowl, mix 1/4 cup of the flour with the salt, seeds and baking soda. Add to the large bowl and mix until smooth.
3. Add enuf flour, 1/4 c. at a time, until a smooth, stiff dough forms.
4. Let the dough rest for 60 minutes.
5. Preheat the oven to 350 degrees
6. Use pasta machine #1 setting sprinkle salt if desired Poke holes in dough gently with a fork (this will prevent air bubbles), cut crackers. Use Parchment lined pans.
7. Bake @ 370°F convection for 20 minutes, rotating the pan half ways, until medium-dark brown. Remove crackers to wire rack to cool and crisp
8. Repeat with remaining dough while the first batch is baking.
